What is the UBP - Ultimate Blog Party?

Hey, I'm Jenni! I live in North Carolina with my actor husband. We'll be married 2 years in May! We met in December 2007, got engaged 10 weeks later, and married 10 weeks after that! Pretty fast!! :)

We love to TRAVEL tons (which is good because our family is all over the US!), we watch a TON of movies, and we LOVE food!! :D My hubby is acting almost full-time and I create craft courses teaching step-by-step instructions for fun things like Quilling and Tutu Making! I love working from home and all the time I have to spend with my friends enjoying beautiful North Carolina!

I am in the process of launching MissTutu.com teaching moms how to make Tutu Skirts and Tutu Dresses (plus accessories) for their little girls!

He is NOT a huge fan of the tutu I tried to get him to model however. :D



Here are a few of my favorite things....
BATHS - recently addicted and looking to buy a house with a huge garden tub! :)
CARBS - but they don't like my waist and booty! I'm trying to quit!!
BABIES - we don't have any yet but I'm getting a new brother-in-law ANY day now!!
MOVIES - one of the fun things my hubby and I love to do together
FAMILY and CHURCH FAMILY - blessed with many amazing people in my life!
BEING ONLINE - I'm never more than a foot from my laptop 24/7 :D
CRAFTS - I regularly spend a small fortune in Michael's, Hobby Lobby, and JoAnn's


Not sure what else to write about so how about I share my favorite cookie recipe so you can make some for the PARTY! ...

How to Make These EASY and DELICIOUS Pumpkin Soft Chocolate Chip Cookies

Please enjoy them and have a big bite for me! :)

Soft Pumpkin Cookie Recipe:
1 C. sugar
1 C. canned pumpkin
1/2 C. softened butter
2 C. flour (try using wheat or spelt flour for a healthier version!)
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon or pumpkin pie spices
1/4 tsp salt
1/2 C. raisins or chocolate chips or nuts

Heat oven: 375.
Mix sugar, pumpkin, butter.
Stir in flour, baking powder, baking soda, cinnamon, and salt.
Mix in raisins, nuts, chocolate chips.
Drop spoonfuls about 2 inches apart onto ungreased cookie sheet; bake until light brown (8-10 min)
Optional vanilla frosting: (they are great even without this!):
3 C. powdered sugar and 1/3 C. butter or margarine, softened.

Beat in 1 1/2 tsp vanilla and about 2 tsp. milk (or water) until smooth and spread on cookies.

Some substitution suggestions:

Try Smart Balance (for baking) instead of butter if you want a dairy-free version of these cookies.

Use spelt flour or wheat flour for a healthier cookie.

Add dried cranberries and chocolate chips to the batter.

Add stevia as a sweetener instead of using sugar (check your container of stevia to see the conversion - do NOT use a full cup of stevia; its MUCH sweeter than sugar!) :)

PS - remember to try the batter before you cook it - YUMMY!! :)

    These pumpkin cookies sound delicious. I like that you added substitutes. Do you or have you substituted whole wheat flour in your baked goods? I've made good cakes with whole wheat flour, but not cookies. They usually come out dry and kind of flavorless. Any tips?

    Pumpkin is full of protein and fiber! I love recipes with pumpkin in them. I recently discovered a pumpkin banana mouse pie from Ina Garten and everyone loved it. I will never make plain pumpkin pie again!

I, too, have a pumpkin chocolate chip cookie recipe that I love (the recipes seem similar, although I frost mine too. They're so good, both my mom and I only make them in October and November so that we don't binge on them all year round and grow accordingly!) Hope you had fun at the party!
